Chocolate & Raisin Cookies
I love food. It is absolutely no secret that I do. I love the cooking, the baking and the eating. The whole shabang. If I ever feel a bit shitty or unproductive then I turn to the stove. Not to sound big headed but I'm alright in the kitchen so for me, cooking yields satisfying results. It also helps remind that I can do some things, when the day/week/month doesn't seem to be going the way you want it, nothing beats whipping something up in the kitchen that you can enjoy there and then, pat yourself on the back and move on from the funk you've been in.
Last week for me it was these cookies. These were my go to when I hit bottom of the motivation pool. I ate about three in one sitting (fresh out the oven cookies are my achilles heel) with a cup of tea and just sat and took a moment. I had achieved something regardless with how everything else was going. It's the little things. Deep down we know it is, we still beat ourselves up about the big things and I don't think that will change overnight but knowing there is one small thing you can do to change your mood that day should be celebrated. What do you turn to when feeling a bit meh?
As I've said mine is spending time in the kitchen, so if yours is too or you just really fancy some delicious cookies (because trust me they are delicious) then here's the recipe... warning you will eat at least two when you first bring them out the oven and it will be glorious. And in this weather, I've been enjoying them with ice cream. Happy Baking...!
200g unsalted butter, room temp (cold butter just doesn't mix well)
100g dark brown muscavdo sugar (this is what I had in the cupboard, you could sub for light brown)
100g golden caster sugar (again was in the cupboard, normal caster sugar would work)
2 tsp vanilla extract
325g self raising flour
100g raisins (or any dried fruit of your choice)
100g chocolate (I used dark but go with personal preference)
Preheat the oven to 180C. Beat the butter and both sugars together until pale and fluffy, usually around 3-4mins. Add the egg and vanilla extract.
Sift in the flour, I always sift because sometimes little flour pockets can form and it isn't tasty. Add a pinch of salt which will help bring out the flavours of the chocolate.
Then mix together until a cookie dough has formed. Throw in your chocolate and raisins and combine, then leave the dough in the fridge for as long as you can, at least half an hour. Leave it in the bowl with a tea towel on top.
Once the dough has been chilled, scoop out a bit and roll into a ball about the size of a golf ball in your hands and then onto a lined baking tray. Give them a little pat down so it resembles a squashed golf ball and bake for 12-14 minutes.
You want them to be golden but not overdone as this means they won't be chewy. Sometimes it depends on your oven, I know that my oven is efficient so I tend to go for 12 mins and I'm a sucker for the chewy centres so would rather have less golden tops and a guaranteed chewy centre. All down to personal taste.
